Your guests will love this tuna…then they’ll love you…then you’ll love me for giving you my recipe. I’ve gagged on a lot of tuna salad in my day. I love the stuff but when it has the wrong condiments or not enough of the right ones, the napkin goes immediately to the mouth. I use albacore because it has a good weight for a salad. Bread is key. Use rye toast, baguettes or baguette rolls (as shown in the photo). Serve with tortillas, sliced roma tomatoes and cucumbers in vinaigrette dressing.

Tuna salad like you've never had it

TUNA SALAD

  1. 1 egg,
  2. 2 tsps miracle whip
  3. 1 tsp sweet relish
  4.  can albacore/ chop it up – no chunks
  5.  1/2 scallion chopped
  6.  tsp grated carrots
  • boil egg hard
  • immediately remove hot yolk and cream smooth with miracle whip
  • add relish
  • add scallions
  • stir lightly
  • add a spray of carrots and toss in lightly
  • stir lightly

This is one sexy sandwich. A flaky light croissant joined with slices of  tenderly cooked brisket, melted horseradish cheese and a thin spread of dijon makes quite a statement. Brisket, one of the eight beef primal cuts, is muscle meat and should be cooked slowly and kept moist for tender sandwich eating. Brisket contains a lot of fat which helps to keep it from drying out during cooking. Slice thin strips and remove the fat. Layer a slice of horseradish cheese over the brisket and place under the broiler for two minutes. Horseradish cheese gives the sandwich punch along with the right mustard. Have you tried green tomato pickles? Wonderful flavor to complement this sandwich. Slice them and serve them atop of the sandwich or on the side.

Doesn’t get any better than fillet catfish chunks on fresh bruschetta bread. Add a squeeze of lemon, red/green peppers and tartar sauce and life is wonderful. This makes a heavenly sandwich. Make sure the catfish is fried light and crispy. Serve with salad greens and baby cukes with a spritz of balsamic vinegar after you’ve thrown a bit of olive oil in the bowl’s bottom.
